Our Story

A Restaurant is born

“Growing up in Swanage I’ve always thought that Durlston Castle should have had a restaurant within its walls.

It’s not just the amazing location in a gorgeous country park or the stunning views that other restaurants just can’t offer.

It’s the feel of the space itself, warm, bright, and welcoming. I realised that this combined with a range of quality food and personal service are the ingredients required for the recipe of a perfect dining experience.

It became my goal and my passion to achieve this dream”

A fully inclusive range of options are available form teas, coffees and cakes to beer, wines and small bites up to full breakfasts and lunches. There is something for everyone to enjoy the view with.

The kitchen is the heart of the restaurant and focuses on serving high-quality food that is cooked from scratch using carefully selected, locally sourced ingredients.

Friendly service staff ensure a personal and welcoming visit where your needs are their top priority.

A genuine passion for food, service, and surroundings encapsulates the dining experience at Seventh Wave, leaving happy guests excited to come back for more.

creative & experienced team

Anyone who has visited Seventh Wave in Swanage will know that the dedicated restaurant team are welcoming, fun, and full of energy

Mark Tipple

Head Chef

Mark is in his second decade working in hospitality (even though he looks so young!). He followed his passion for food to train at the Tante Marie Culinary Academy under a Michelin-starred chef and developed his career in specialised London fish and five-star restaurants.

To escape the rat race he moved his family to Dorset to be nearer the sea and worked at several well-renowned restaurants in Swanage before moving to Seventh Wave.

Mark enjoys creating tasty and unique menus, sourcing fresh ingredients locally, and working with local suppliers. He humbly describes his made-from-scratch dishes as “good, honest food”.

Emily Dunkerley

manager

Emily took over Seventh Wave restaurant after working as a manager for 3 years, she saw massive potential in the business and restaurant which she is realising today. As a well known Swanage local (her family farm backs onto Durlston Country Park) she loves that the restaurant can be kept as a local entity supplying wholesome, homecooked quality food as opposed to a ubiquitous, cloned corporate business.

Emily believes in constantly improving not only the food and drink but the personal service and the diner’s entire experience.

It was Emily that first envisioned the many benefits a highly trained chef such as Mark could bring to Seventh Wave and the local area.
